Customers roll up with super-specific requests: bread type, main cheeses, extras (bacon, tomato, onions, etc.), sauces, and a fry style with seasoning. The trick is flow. Pre-stage your bread and fillings, scan the queue, and line up two or three builds before you even touch the press. Drop fries the second a sandwich hits the grill so both finish together—freshness timing is everything for those build/grill/fry/service scores.
